This is one of my lazy meals. It’s so simple, that you’ll feel lazy making it, but at the same time it’s delicious, nutritious and feels like you put some effort into it.

  • 2 Cups Cooked Brown Rice Cool Before Use
  • 1 Can Black Beans
  • 1 1/2 Cups Frozen Corn Cooked
  • 1/4 Cup Minced Onion
  • 1/4 Cup White Vinegar
  • 2 Tablespoons Vegetable Oil
  • 2 Tablespoons Snipped Cilantro
  • 1 Minced Jalapeno Peppers
  • 2 Teaspoons Chili Powder
  • 1 Teaspoon Salt
